If you're a mama like me and you're looking for quick + easy meals that taste GREAT ... you've come to the right place. It's been awhile since I posted a recipe and this Turkey Taco Casserole is one of my faves. I've shared it before but it's SO good, it definitely deserves another day in the spotlight :) This meal won't kill your diet, and you'll probably have leftovers, which is another huge bonus, am I right?
Here's what you'll need:
- (alittle over) 1 lb - ground turkey
- 1 packet taco seasoning
- 1 can Annie's refried black beans
- 1/2 cup salsa
- 1 1/2 cups shredded cheese
- 2 wheat tortillas cut into strips
*sliced avocado and plain greek yogurt (to act as sour cream) for serving
Directions: Preheat over to 375 degrees. Grease a 8" square baking dish. On your stove top, cook the turkey meat on medium high until almost cooked through. Add taco seasoning and cook about 5 more minutes. Layer 1/2 of the turkey meat on the bottom, spread 1/2 the can of black beans over the top, top with 1/4 cup shredded cheese and strips of tortillas. Repeat this step (turkey, beans, cheese, tortilla strips). After laying on the last of the tortilla strips, top with the salsa and the remaining shredded cheese. Bake for 30 minutes. Let stand for 20 minutes after cooking. Optional: Serve with slice avocado on top and some plain greek yogurt (as a sour cream replacement!) Enjoy!
