Anyone else have a case of the "Mondays" yesterday? Seriously ... I couldn't get out of my own way! I felt like the day just dragged on and on, so I was excited when it was time to cook dinner so I could (hopefully) seek refuge in the kitchen. Fun fact...I used to really hate cooking, especially dinner - but now that we have a baby I actually enjoy taking time to food prep and cook by myself over a glass of wine! It's ACTUALLY relaxing! Who's with me?!
I love this simple recipe from A Cozy Kitchen & I didn't change a thing except for the main ingredient ;) ...I decided to go with fresh haddock, instead of tilapia. Just a preference on taste!
1 jalepeno, sliced thin
1/2 white onion, finely chopped (I used 1/4 and it was fine!)
1/4 cup fresh cilantro, chopped
1 T vegetable oil (I used olive oil)
Juice from 1 lime or lemon (Lime was amazing!)
1 pound of tilapia / haddock, cut into chunks
Corn tortillas, warmed or lightly charred (I charred mine :)
Salt and pepper, to taste
Directions: Combine jalepeno, onion, cilantro, oil, and lime juice. Toss with the haddock. Heat some oil in a pan on medium-high heat. Pan-fry fish chunks until cooked, about 3-5 minutes. Season with salt & pepper. Serve fish in warmed tortillas with garnishes such as lime, cortija cheese, salsa, and cilantro!
